Cherni Vit Green Cheese

We visited this small town in rural Bulgaria in September 2019. The black Vit hotel listed in the article is no longer in operation. After a lunch of interesting soup in the town’s tiny restaurant and grocery store, the owner’s son took us down the road to meet the local cheesemaker. We were invited into the yard, where we were seated at a picnic table, and were presented with a selection of cheeses of various ages. They ranged in age from one month to over a year, and included a variety made with black truffles. They were all delicious, the younger ones creamy and light and the older ones with a strong and pleasant flavor. We ate the rinds as well.
