Fried Cod Tongues

I believe these are cod cheeks not tongues or a chunk taken from the back of the head. We fish for these in New England and cut the cheeks from the cod and Wolfish. The only Caveat, the fish has to be large enough to yield something big enough to eat.
I also cook the entire head of trout and salmon I catch as they all have a tasty cheek meat that has a much different flavor profile than the rest of the fish.

Just to chime in late, I love these and had them in Newfoundland. They are not the cheeks. The cheeks are jaw and mouth meat. The tongue is a small muscle inside the throat.
