Headed to the south of France in May - looking for recs!

My family and I are headed out for some R&R in France, round Arles, and could use some help figuring out what to do. We have two things in the Atlas already, and believe you me, we will be GOING. But I’d love some recommendations on what else to see, whether it’s sightseeing or food! Thank you in advance.

We were in Arles late last year. Wonderful town. Explore the center “old town” and the Roman collisseum (sp?). We stayed in an absolutely gorgeous hotel, called the Hotel Arlatan. Perfect location in old town. Lovely shops.

Go to the Camargue region or visit the wineries of Chateauneuf du Pape or Gigondas. Also Avignon is interesting to visit.
