Many years ago, this fungus grew on my corn, infecting my entire small home garden crop. I wish I had known what it was then. I could have tried it, instead of trashing my whole crop. Since I couldn’t find out anything about it, I assumed it was poisonous, like ergot on rye! Next visit to Mexico, I will seek this out.

It’s delicious. I first learned about in the 1970s in Diana Kennedy’s first book. I have used the canned huitlacoche with excellent results.
