In the late 70’s I worked in Tulsa and stayed next door to Jamils. At that time food in general was fairly bland and no one was taking chances. Finally the wafting of smoking meat lured me in and opened my eyes, my taste, and sense of adventure. I watched old women making tabouli by hand , saw hummus being blended from chic peas. It was addicting.
Today I credit Jamils waking me up to Mediterranean taste. These flavors are still the most satisfying to me. I have to get up to Tulsa someday for a great meal.
