Thank you for this article! I was so intrigued that I was determined to get one for Christmas. Luckily, we do Christmas in Chicago, so I was able to get one at Racine Bakery.

Heads up to anyone else who goes there — to get a fresh spit cake, you need to get your order in a week or so before Christmas. I missed that deadline, but no matter because they also had a bunch of packaged ones that had been imported from Lithuania.

It is unique. Tastes like slightly hard waffle. But you do want them fresh, they get stale after a day or so. Was fortunate they got one for a family gathering on my last visit.

I just got back from Lithuania and have a few more photos. Alas I didn’t see them made but we had some more at a gathering and I saw it in shops.

Just wanted to add a small correction to the post. Proper German Baumkuchen actually should not look like stacked donuts. If it has nicely rounded edges like that, it’s a sure sign that it’s an industry-made cheap copy. They are really popular in Japan (to be fair, the matcha version didn’t actually taste that bad), so you find these “donut” versions a lot when searching for it online, but the real Baumkuchen looks more like a much tamer version of the Lithuanian spit cake (like this or this).

There are not that many places where you can get it freshly made, the most famous arguably being the small town of Salzwedel, aside from online orders. But as others have mentioned in the comments, you really have to eat it fresh. It goes stale quickly and the subtle taste only comes out fully when eaten as soon as possible. But it is a real treat. Yumm. :slight_smile:
