Respectfully, the following statement is not accurate: " Distilling the sticky substance yields tequila or mezcal, while fermenting it produces the lesser-known drink pulque."

Tequila and mezcal are both made from the cooked heart of the agave plant, not the “sticky substance” (sap). Tequila/mezcal and pulque are made from different parts of the agave.
