I found the global cafes list interesting but had one to recommend - Truth Coffee in South Africa. The steampunk interior is amazing and the coffee is great too.
I would add Cafe Trieste, Vallejo Street North Beach, San Francisco — birthplace of the Bohemian poets and artists. It was also the first espresso cafe established on the West Coast, USA. Excellent, authentic coffee and tiramisu.
While not strictly a coffee shop, Les Deux Garcons on the famous Cours Mirabeau in Aix-en-Provence probably serves more espressos than anything else except wine. The many small tables under its awning are perfect for people watching, as people have been doing here since 1792. While you may not spot Piaf, Picasso, Belmondo, Cocteau, or Churchill anymore, you might spot George Clooney or Hugh Grant.
I personally would love to visit Cafe Yeonnam-dong 223-14 in Korea. It must feel amazing walking into cartoon
