In the 1970s there was a cheese maker on Cannery Row in Monterey (I lived in Carmel at the time) that made what was considered the only authentic Monterey Jack. I can’t remember the names of the company. They used to sell about 10” diameter wheels, and after I moved away I would mail order them until ultimately they closed. It was excellent, buttery, semisoft. Never had any good Monterey Jack since.
